6 Ways to Stretch a Meal

Right?
Sometimes, we have more money than month and wonder how we’re going to avoid going hungry at the end of the month. When the grocery budget has run out and the cupboards are almost bare, how do you keep the kids fed?
The secret is to keep some staple stocked all the time. If you have these ingredients, you can stretch $1 of beef into a meal for 10 people. Almost.
Rice
We buy rice 20 pounds at a time. I try to keep a bowl of cooked rice on hand at all times. When we cook a soup, stew, or hotdish, we add a cup or two of rice to the dish. If we’re running late for dinner(a painful situation with a 2-year-old, a 4-year-old, and an 11-year-old who’s about to hit 5′ 7″), we’ll dump a can of soup over the top of a bowl of rice. A quick trip through the microwave, and we’ve got a reasonably healthy meal in 2 minutes. Another trick is to add some to ground beef, whether it’s a meatloaf or sloppy joes.
Beans
This is another ingredient I try to keep on hand, cooked, and in the fridge. We use it like we use the rice. We add a cup to soup, or almost anything else. Throw some barbecue sauce on them, and you’ve got pseudo-baked beans for cheaper than you can buy a can. Mash them with taco seasoning and you have refried beans. Add a cup to scrambled eggs for a filling breakfast.
Potatoes
There are so many ways to use potatoes to stretch a meal. Shred them to cook with eggs or slice them onto a hotdish. Cube them into soup or dice it as a thickener in stew.
Pasta
Yet another item that can go into almost anything. Before I met my wife, I’d make a dish that consisted of nothing more than whatever pasta I had on hand, with a can of soup, cooked until the pasta was done and most of the liquid was absorbed by the noodles. I learned how to wield spices like a crazy Neptunian ninja.
Soup
Whenever we cook, whatever we eat, we make enough for leftovers. When the leftovers are no longer enough to make a meal for anyone, they go in a bag in the freezer. When we have enough, we put them all in a slow-cooker with some water and a ton of seasonings. When we get home from work, we have a delicious soup waiting for us–free soup. If we want stew, we throw in some rice. By the end of the day, the rice has completely dissolved, transforming our delicious freaking soup into yummy dang stew. Everything we make tastes good, so combining a dozen dishes into one soup should also taste good, right? The exception: fish. Never, ever add fish to free soup. Trust me.
Bread
I don’t use bread to cook much, though it’s harder to get much cheaper than a grilled-cheese sandwich. I like to serve a slice of bread with dinner. It just makes the food feel more filling.
That’s how I make a meal for two stretch to feed my family of five, without sacrificing taste or nutrition. How do you make a meal stretch?
Net Worth Update
The remodel of our inherited new house is about done. The bills have basically been paid and the insurance checks have been cashed.
Now that it’s all (more or less) done, I’m finding my financial situation has changed a bit. My credit card is paid off, except for our regular monthly expenses and a couple of remodeling expenses that will be paid off in the next week or so. Our mortgage is within site of being paid off, and we have a rental property that is mortgage-free.
With all of the changes, I took the time to measure the difference.
Let me tell you how nervous this post makes me. My business partner is under the impression that I no don’t care about our business because I no longer have any worries.
That’s crap.
Yes, our net worth has gone up $329,000. That’s not nothing, but it’s hardly enough to retire on.
$113,000 of it is in retirement accounts. I mean, great, we’re a bit ahead of where we need to be, but it’s not like that money is putting food on the table for us this week.
$177,600 of it is in our rental property. Which doesn’t start driving income until February. Today, it’s a $25,000 money sink. That’s money we would have had to spend to sell it, even if we didn’t want to keep it.
There’s a $10,000 car that we need to deal with, we’ve paid off our credit card debt, and we have an extra $10,000 in the bank.
So, yes, we are in a much better place financially. That’s a comfort, long-term. Day-to-day? Our credit card payment has been pushed to our mortgage, so that’s not extra spending money. We don’t know exactly how much of the $10,000 in the bank still needs to be spent on the house, and we don’t know how we’re going to reorganize our vehicle situation.
That’s a lot of uncertainty that, at most, involves $20,000. Again, it’s not nothing, but it’s not a lot. It won’t cover our barebones expenses for 6 months. We pay $15,000 per year just in daycare, and we need to put braces on a kid next year.
We are in a much better place, but I can’t stop hustling.
The Spending Styles of the Rocky Horror Picture Show
Everybody has a spending style. Like a fingerprint, it is unique to each individual, even if that individual is fictional.
Since it is the Halloween season, and The Rocky Horror Picture Show is a Halloween movie, I’m going to look at how those characters spend their money.
Janet Weiss – A Heroine
Janet is the stereotype of every suburbanite soccer-mom-who-hasn’t-gotten-married-and-had-kids-yet. She wants to keep up with the Joneses(“It’s nicer than Betty Monroe had! [Oh Brad!]”) and she is obviously impressed by and envious of people who have all of the trappings of the “finer things”. If she has a credit card, you can bet that it is peeling on the sides from over-use. While she wears conservative clothes and sensible shoes to go visit an old mentor, she’s almost definitely got a closet full of fancy shoes and a drawer full of real-baby-seal-skin g-strings. If Brad were smarter, he’d run, and not just because of her loyalty issues. She’ll never be content with a sensible car and modest house.
Brad Majors – A Hero
Brad is a pompous jerk who thinks he’s better than those around him. He’s also extremely conservative and slow to accept change. He’s going to give Janet an allowance and complain every time she spends a penny of it. His investment portfolio is well-balanced and configured for long-term growth and he’s going to rub your nose in it at the neighborhood barbecue. To shut him up, just ask why his kid was born with an accent and garters.
Magenta – A Domestic
What’s a domestic? Magenta is the most financially responsible person in the show. She’s third -in-command of an alien invasion, but still takes on a second job? That’s a woman planning for retirement. She’s not going to rely on anyone to support her. She knows how to enjoy a party, without having to spend all of her money on a glitter-suit.
Columbia – A Groupie (as Little Nell)
Columbia is incapable of making a decision that wasn’t pre-formed by her peer group. She’s doomed to chase every fad, hoping it will impress those around her. While she’ll always be remembered for her glitter-suit or the corset that isn’t quite tall enough, she’ll never be happy or have a spare penny in case of emergencies.
Riff Raff – A Handyman
Riff Raff has jealousy issues. He sees his boss and commander throwing a party and having a good time, but, instead of working towards being able to do that himself, he kills his boss and steals his house. He is greedy, jealous, and deceitful. Don’t ever turn your back on him, or he’ll steal your wallet, hit you over the head and bury you in the backyard just so he can pretend it’s his party.
Eddie – Ex Delivery Boy (as Meatloaf)
Eddie is out of his head (H-E-D). He’s the tag-a-long who will keep buying expensive dinners that he can’t afford in an attempt to impress whoever is around to see him pick up the check. He isn’t sure how to fit in, but he’s positive that he can buy his way there. In reality, he’s dead(spelled right) broke and will end up getting screwed.
Rocky Horror – A Creation
Here is the true blank slate. He’s just seven hours old, so he’s got no bad habits to break. Unfortunately, he’s never had to learn any hard lessons, so his head is easily turned by an glittered bauble or babbling, half-dressed flake. He’s incapable of making an informed decision about anything, so he follows everyone around getting whatever they like. He’ll spend his entire life getting by on his looks, which will almost always be successful, until life catches up to him and he dies broke and alone.
Dr. Frank-N-Furter – A Scientist
Frank knows how to throw a party. He travels 12 billion light years brings not only a keg, but the entire party house with him. Who wouldn’t want to be his friend? There’s a fancy house, a room to stay in if you drink too much, pretty people being built in the lab, and gourmet corn-fed delivery-boy being served for dinner. Watch out, though. He doesn’t tend to his job. One day, the credit cards will be maxed, the bank will foreclose on the house and send it back to Sweet Transexual Transylvania, leaving Frank penniless. Who will be his friend then?

Avoid Getting Ripped Off On Ebay
My son, at 10 years old, is a deal-finder. His first question when he finds something he wants is “How much?”, followed closely by “Can I find it cheaper?” I haven’t–and won’t–introduced him to Craigslist, but he knows to check Amazon and eBay for deals. We’ve been working together to make sure he understands everything he is looking at on eBay, and what he needs to check before he even thinks about asking if he can get it.
The first thing I have him check is the price. This is a fast check, and if it doesn’t pass this test, the rest of the checks do not matter. If the price isn’t very competitive, we move on. There are always risks involved with buying online, so I want him to mitigate those risks as much as possible. Pricing can also be easily scanned after you search for an item.
The next thing to check is the shipping cost. I don’t know how many times I’ve seen “Low starting price, no reserve!” in the description only to find a $40 shipping and handling fee on a 2 ounce item. The price is the price + shipping.
Next, we look at the seller’s feedback. The feedback rating has a couple of pieces to examine. First, what is the raw score? If it’s under 100, it needs to be examined closer. Is it all buyer feedback? Has the seller sold many items? Is everything from the last few weeks? People just getting into selling sometimes get in over their heads. Other people are pumping up their ratings until they have a lot of items waiting to ship, then disappear with the money. Second, what is the percent positive? Under 95% will never get a sale from me. For ratings between 95% and 97%, I will examine the history. Do they respond to negative feedback? Are the ratings legit? Did they get negative feedback because a buyer was stupid or unrealistic? Did they misjudge their time and sell more items than they could ship in a reasonable time? If that’s the case, did they make good on the auctions? How many items are they selling at this second?
[ad name=”inlineright”] After that, we look at the payment options. If the seller only accepts money orders or Western Union, we move on. Those are scam auctions. Sellers, if you’ve been burned and are scared to get burned again, I’m sorry, but if you only accept the scam payment options, I will consider you a scammer and move on.
Finally, we look at the description. If it doesn’t come with everything needed to use the item(missing power cord, etc.), I want to know. If it doesn’t explicitly state the item is in working condition, the seller will get asked about the condition before we buy. We also look closely to make sure it’s not a “report” or even just a picture of the item.
Following all of those steps, it’s hard to get ripped off. On the rare occasion that the legitimate sellers I’ve dealt with decide to suddenly turn into ripoff-artists, I’ve turned on the Supreme-Ninja Google-Fu, combined with some skip-tracing talent, and convinced them that it’s easier to refund my money than explain to their boss why they’ve been posting on the “Mopeds & Latex” fetish sites while at work. Asking Mommy to pretty-please pass a message about fraud seems to be a working tactic, too. It’s amazing how many people forget that the lines between internet and real life are blurring more, every day.
If sending them a message on every forum they use and every blog they own under several email addresses doesn’t work and getting the real-life people they deal with to pass messages also doesn’t work, I’ll call Paypal and my credit card company to dispute the charges. I only use a credit card online. I never do a checking account transfer through Paypal. I like to have all of the possible options available to me.
My kids are being raised to avoid scams wherever possible. Hopefully, I can teach them to balance the line between skeptical and cynical better than I do.
3 Ways to Keep Your Finances Organized
I have 16 personal savings accounts, 3 personal checking accounts, 2 business checking accounts, and 2 business savings accounts. That’s 23 traditional bank accounts, spread across 3 banks. Just talking about that gives my wife a headache.
Every account has a reason. Three of the savings accounts exist just to make the matching checking accounts free. One of the checking accounts handles all of my regular spending that isn’t put on my rewards card. 14 of the savings accounts are CapitalOne 360 accounts that have specific goals attached. A couple of the accounts were opened to boost the sales numbers for a friend who is a banker. Really, it’s almost too much to keep track of. One credit card, 5 checking accounts, 18 savings account, all on 4 websites.
Sometimes, when you extend your bank accounts this far, it gets easy to let it all slip away and lose track of where your money is going. How do I keep track of it all?
1. Simplify
Whoa, you say? Simplify? I don’t simplify the number of accounts I have, I simplify the tracking, or specifically, the need to track.
Twice a month, I have an automated transfer that moves a chunk of money from my main checking account to C1360. I have a series of transfers set up there that move that money around to each of my savings goals. I move $100 to the vacation account, $75 to the braces account, and $10 to the college fund, among all of the other transfers. Doing that eliminates any need to keep track of the transfers, since it is all automated.
Using the same rules, I make every possible payment happen automatically, so I don’t have to worry about paying the gas bill or sending a check to the insurance company.
Simple.
2. Complicate
As you saw in the opening sentence of this post, I also complicate the hell out of my accounts. On the surface, it would seem like that would make it harder to keep track, but in reality, the opposite is true. I have 14 savings accounts at C1360, each for a specific savings goal, like paying my property taxes or going to the to Financial Blogger Conference in October. I can log in to my account and tell at a glance exactly how much money I have for each of my goals. In the account nickname, I include how much each goal is for, so I can easily see if I am on track.
3. Quicken
Everything I do gets set up in Quicken. This makes it easy to track how much actual money I have available. Since I’ve moved my daily expenses to a credit card, I only have about a dozen entries to worry about when I balance my checkbook at the end of the month. At that time, any excess funds get dropped into my debt snowball.
This may all leave me with a needlessly complicated system, but it’s a system that grew slowly to meet my needs and it is working well for me. I spend about 2 hours a month tracking my finances, and can–at any time–tell at a glance exactly how my finances look.
